Hello everyone!
Thursdays are turning point days - they're usually the last day I have my repeat dinner of the week and the weekend has almost arrived.
Breakfast:
homemade granola, soy milk; coffee with soy milk and pumpkin spice.
Back in Fall, Trader Joe's sold pumpkin spice in their spice section, so naturally I snagged that up IMMEDIATELY (I love everything pumpkin, like the rest of the population). I am fairly certain it was intended to be used in baked dishes such as pumpkin pies and breads, but I so do not care, I put it in my coffee. Full disclaimer, it's nothing like the awesomeness of a PSL, but it's close enough at a fraction of the cost with no mile-long Starbucks line. I had forgotten it was in my cabinet, until I rediscovered it this morning and added a great flavor to my coffee!
Lunch:
(same as yesterday, but I forgot the almonds!) Spinach salad with red quinoa, roasted beets, and roasted carrots; an apple; and celery with peanut butter.
Snack: banana
Dinner:
Sauteed kale with EVOO, salt and pepper, and garlic (key to getting the garlic flavor is to sautee the garlic first), and the last of my chicken and rice soup.
Time: 40 minutes.
