Day 3: old soup, new salad

Day 3 still going well!

Breakfast: woke up late (oops!) so I ran out the door and just grabbed a granola bar and some black coffee. 

Lunch: more lentil soup (used a pan to reheat)

Snacks: apple with peanut butter and a banana

Dinner: pasta (boiled al dente) with olive oil and salt and pepper; beet, avocado, and arrugula salad from the Clean Slate cookbook. First, I placed the beets in foil wraps and baked them in the oven for 45 mins at 425°F. I pulled them out, let them cool a bit, and used a paper towel to pull the skins off. I cut the beets into quarters, sautéed them in a pan with their greens, some olive oil and salt and pepper, and then combined them into the recipe "slaw". 

I then combined it with some arugula, more olive oil, and some avocado! Very tasty.
