Day 2 no microwave, a success!
Breakfast: granola with soy milk.
Snack: trail mix, banana
Lunch: lentil soup (from yesterday reheated in a pan)
Snack: apple, hot chocolate (purchased from local coffee shop)
Dinner: reheated my leftover Brussels sprouts in a pan with some olive oil and they were great! I then was unsure of what to do to reheat my extra couscous, so I placed it in a pan with some olive oil to see if that would work well... It did not. My Tupperware is plastic so I know it's not microwave safe, but tomorrow I will be looking for something I have to be used in the oven to reheat more of my leftovers! Perhaps foil? We will see!
