2/24/2014: coconut creamer

I am sick today. And I was yesterday. And the day before. It started out as a sore throat, now it's in my ears, and I have a headache (possibly a small fever too). So it's good times for me right now. And it seems everyone else in school is sick right now to. So I blame you all for getting me sick.

BUT if there is one thing I know will make me feel better, it's eating healthy. Bring on the kale!!

And coffee. I drank all my coffee this morning.

fun tidbit: I find I usually do not finish my coffee (I brew my coffee at home and bring it to school with me most days) whether I drink it at home or at school. So strange right?

Breakfast: oatmeal with brown sugar and cinnamon; coffee with Trader Joe's coconut creamer.
I really want to like soy milk and I am slowly getting there. But I really don't want to limit my non-dairy options to just soy-based products. I have TRIED SO HARD to like almond milk and it's like Gretchen Weiners trying to make fetch happen. (It's just not going to happen.) Additionally, Trader Joe's sells their soy milk (theirs is my favorite by far) in half gallons, and it's only good for about 10 days. I do not drink this much milk in 10 days, especially since right now I'm really only using it for a creamer. And throwing away like a half of half of a gallon of milk every 10 days just seems so wasteful! So instead, I picked up a coconut creamer at TJ's this past weekend and I have been a fan so far!

Lunch: salad from the cafeteria at school. Of course the day after I draft a blog post all about how much money I save by making my own food, I forget to make my lunch. So today, I paid $6 for a large salad:

Snack: tangerine

Dinner: steak, brown rice, broccoli; sautéed kale.

(Sorry, I remembered to photograph about halfway through eating!)

Dessert: chocolate chip cookies

Today was pretty low in time allocation because I ate lunch at school and dinner was a reheat + sautéing the kale.
TOTAL TIME: 30 mins
