3/22/15: doing double duty

I love efficiency. Like really love efficiency. I will go out of my way to do something if it's more efficient. Like take for example an ingredient that is readily usable in everything. Say, cinnamon.

Turns out cinnamon is great for you (apprently though I'm sure some scientific consensus will find to the contrary soon). So when I started eating oatmeal every morning, someone suggested I add cinnamon to my coffee because it was good for me, it played well with coffee aroma, and it spiced up coffee without any serious extra expense (such as purchasing Torani syrups).

I love this!

Breakfast

Oatmeal (with brown sugar and cinnamon mixed in) and a scrambled egg (salt and pepper; scrambled in butter because scrambling an egg in anything less is just disappointing). And of course a cup of coffee on the side.

Lunch
Melissa d'Arabians cookbook $10 dinners lays out a Niçoise salad, which I made before and was a huge fan of (except the potatoes boiled super weirdly... Brown/black spots in the middle were highly concerning) and so I decided to make it again but roast the potatoes instead in the oven for about 35 mins and substitute romaine for kale (because we all know I'm obsessed with kale). Delicious!
(45 mins; good all week)

Dinner
So um there were two pieces of chicken that I ate prior to remembering to take a photo of my food. Oops. This is the beet slaw salad I have been referencing - it's supposed to be served with avocado but I have none and I forgot to add the sunflower seeds (both of which complexity and make great this salad). Also please note the spoonful of peanut butter... The obsession continues.
